Kheer, also known as Indian rice pudding, is a popular dessert in India and other South Asian countries. It's made with rice, milk, sugar, and flavored with cardamom, saffron, and nuts. Here's a simple recipe for making kheer:
Ingredients:
1/2 cup basmati rice, rinsed and soaked for 30 minutes
1 liter full-fat milk
1/2 cup sugar
1/2 tsp cardamom powder
A few strands of saffron
2 tbsp chopped nuts (almonds, pistachios, or cashews)
1 tbsp ghee (clarified butter)
Instructions:
In a heavy-bottomed pan or kadhai, heat the ghee over medium heat.
Drain the soaked rice and add it to the pan. Stir well and cook for 2-3 minutes until the rice turns slightly brown.
Add the milk to the pan and stir well. Increase the heat to high and let the milk come to a boil.
Reduce the heat to low and simmer for 45-50 minutes, stirring occasionally, until the rice is fully cooked and the mixture has thickened.
Add the sugar, cardamom powder, and saffron to the pan and stir well. Cook for another 5-10 minutes until the sugar has dissolved and the kheer has thickened further.
Add the chopped nuts to the pan and stir well. Cook for another 2-3 minutes.
Remove the pan from heat and let the kheer cool for a few minutes.
Serve warm or chilled, garnished with more chopped nuts.
