Gajar ka halwa is a traditional Indian dessert made with grated carrots, milk, sugar, and ghee (clarified butter). Here's a simple recipe for making gajar ka halwa:
Ingredients:
1 kg carrots, peeled and grated
1 liter full-fat milk
1 cup sugar
1/2 cup ghee (clarified butter)
1/2 cup chopped nuts (cashews, almonds, or pistachios)
1 tsp cardamom powder
Instructions:
In a heavy-bottomed pan or kadhai, heat the ghee over medium heat.
Add the grated carrots and stir well. Cook for 10-15 minutes until the carrots turn soft and change color.
Add the milk to the pan and stir well. Increase the heat to high and let the milk come to a boil.
Reduce the heat to low and simmer for 1-2 hours, stirring occasionally, until the milk has been absorbed and the mixture has thickened.
Add the sugar to the pan and stir well. Cook for another 10-15 minutes until the sugar has dissolved and the halwa has thickened further.
Add the chopped nuts and cardamom powder to the pan and stir well. Cook for another 5 minutes.
Remove the pan from heat and let the halwa cool for a few minutes.
Serve warm or chilled, garnished with more chopped nuts.
